Thick, evenly cut fillets with snow-white flesh and a fine, flaky texture. Mild and gently sweet, they take on seasoning and marinades well without losing their own character. The fillets are trimmed and ready to cook, so there is very little standing between the pack and the plate. Season them simply with coarse salt and spring onion, steam with ginger, or grill with herbs until the edges just begin to catch.
